Description
Niviana's Valpolicella Ripasso comes from vineyards located in the province of Verona, within the renowned Venetian denomination. The grapes used are the classic Valpolicella varieties: Corvina Veronese, Corvinone, Rondinella, and Molinara.
The grapes are traditionally vinified as red wine. Once in the cellar, they are destemmed and pressed, then vinified in temperature-controlled stainless steel tanks and passed over the Amarone pomace. The wine then ages for 4 months in 50 hl barrels before being bottled and released for sale.
Ruby red with garnet reflections, the wine reveals aromas of cherry and sweet spicy notes on the nose. The palate is full-bodied and velvety, with a persistent finish.
Excellent with egg pasta with beef ragù, pheasant with mushrooms, or legume soups.
