The Valpolicella Ripasso Superiore from Gerardo Cesari is a red wine made from Corvina, Corvinone, Rondinella, and Molinara grapes sourced from various areas of the Valpolicella Classica region in Veneto. The vineyards, covering an area of 70 hectares, are cultivated on calcareous soils of alluvial-moraine origin.
The "ripasso" technique is a traditional practice in Valpolicella, involving re-fermenting the wine on the fermented pomace of dried grapes used to produce Amarone. This process enriches the wine with aromas, tannins, and color, giving it greater structure and complexity.
In appearance, this wine presents an intense red color with garnet reflections. On the nose, notes of dried red fruits and spices are perceived, along with hints of salted cherries. On the palate, this red wine is medium-bodied, with a silky and juicy finish.
