Valpolicella Ripasso DOC Superiore 2014 Dal Cero
Description
This Ripasso Superiore was born in the vineyards of the Dal Cero winery. located in San Briccio and Lavagno, within the province of Verona.
This wine is made from a skilful blend of Corvina, Rondinella and Molinara grapes, harvested between the last ten days of September and the first of October. The grapes are then crushed and destemmed in steel, where they ferment for about 12 days. The new wine is separated from the skins and stored in steel tanks until January, before being "passed" on the freshly obtained Amarone marc. The stay is about 7 days. 12 months maturation in tonneaux and 20 hl oak barrels.
Ripasso Superiore Dal Cero, ruby red in color with good intensity, impresses with the perfect harmony of its aromas, where a ripe red fruit is combined with sweet spices and medicinal herbs. In the mouth it is full and satisfying, with an excellent structure and soft tannins, resulting agile on the palate.
A wine to be drunk within 5 years of the vintage, Ripasso Dal Cero goes very well with stews and braised meats. Game, cut and porcini mushrooms are the other combinations that are decidedly spot on.
