Where it comes from
This sparkling wine originates in the Jura, a French region with a continental climate and marked temperature variations. The vineyards are planted on limestone, clay, and marl soils, between 300 and 450 meters above sea level. These conditions favor pronounced acidity and preservation of aromas, while the local tradition maintains balance between structure and finesse.
How it is produced
Production involves mechanical harvesting and static decantation to separate the coarser parts. The first fermentation takes place in stainless steel at controlled temperature to preserve fragrance and aromatic precision. The base wine is blended and undergoes the prise de mousse in bottle following the Traditional Method, with maturation yielding a fine perlage and creamy texture.
Tasting notes
In the glass, it displays a straw yellow color with greenish highlights and a fine, persistent perlage. On the nose, there are white flower aromas such as acacia and orange blossom, followed by citrus notes of lemon and grapefruit, and delicate hints of bread crust. On the palate, it is fresh, medium-bodied, with balanced acidity and a creamy structure that envelops the taste, closing with a pleasant minerality.

This Brut pairs well with seafood dishes such as penne allo scoglio and seafood risotto, thanks to its fresh and saline profile.
