Where it comes from
This red comes to life from a careful blend of grapes sourced from two renowned lieu-dits in the Volnay area: Les Grands Champs and Les Famines. The decision to vinify the two climats separately allows for the preservation of their original uniqueness, as they are blended only when their respective cuvées reach the ideal level of maturation for smooth and balanced integration.
How it is produced
Production begins with meticulous hand harvesting, which is crucial to ensure the absolute integrity of the whole grape clusters selected for vinification. The process continues with an initial low-temperature maceration, followed by a spontaneous fermentation that lasts five to ten days. After the second extraction phase of variable duration, the wine rests for eighteen months inside partially new oak barrels. This key step consolidates the wine’s structure and sharpens its aromatic precision without masking the fruit’s identity.
Tasting notes
At first glance, the glass shimmers with a bright ruby red color, displaying a clear, concentrated hue free from excess. When brought to the nose, intense floral notes of rose and violet emerge, immediately followed by clean, fruity hints reminiscent of currant and raspberry. On the palate, there is a fresh and savory progression, supported by soft tannins that make it remarkably drinkable. The finish concludes while maintaining a rigorous balance between the fruit’s fragrance and a pleasant, subtle saline sensation.
