The name Ferrari identifies one of the most important Italian sparkling wine houses in terms of fame and quality. Ferrari sparkling wine is today a Trento Doc Metodo Classico born from the intuition of Giulio Ferrari who already sensed in 1902 the authentic vocation of Trentino in the production of sparkling wines starting from Chardonnay , a variety used above all in the creation of Champagne . Trentino itself remains a reference area in the production of high quality Chardonnay grapes, favored by significant daily temperature variations as starting conditions for the production of grapes of great elegance and structure. These are the basic ingredients that contribute to the fame of Trentodoc as a Classic Method positioned after Champagne for international importance. In 1952, with the transfer of the baton to Bruno Lunelli, the Ferrari house achieved notoriety in Italy by profiling itself as the quality brand in the production of prestigious bubbles. From the 1970s sparkling wines such as Ferrari Rosé, Ferrari Perlé and Giulio Ferrari Riserva del Fondatore will become very popular, to which sparkling wines from the Maximum and Gran Cuvée lines will soon be added. Compared to the production of Ferrari sparkling wine, delicate and complex are the steps that allow you to transform a base wine into a fine bubble. At the end of the summer, the clusters of Chardonnay and Pinot Noir grapes are harvested by hand and processed in the cellar to start the first fermentation. In this phase, the aromatic purity of the basic grapes is already a necessary precondition to create bubbles of great structure. To the definition of the cuvée contribute wines of different types produced by the company and expertly studied to deliver a unique product. With the addition of selected yeasts, the second fermentation in the bottle will allow the wine to develop carbon dioxide and remain in contact with the yeasts for two to ten years. The fame of Ferrari Trentodoc sparkling wine does not depend only on the successful personalization of the Classic Method and the extraordinary vocation of the Trentino region which guarantees its quality and excellence, but on the versatility with which this sparkling wine can accompany typical dishes of many culinary traditions: Ferrari is ideal in the creation of appetizers based on cold cuts and dairy products, fresh and dried fish. With its delicate flavor and refined structure it can finish traditional regional dishes such as pasta alla carbonara, Neapolitan pizza or spaghetti with tomato sauce.
Ferrari and the Trentodoc denomination
Ferrari Trentodoc is the Classic Method produced within the appellation which includes 40 producers and over 100 labels. Ferrari Trentodoc is produced both with grapes from the Lunelli family vineyards and from the harvest conferred by about 500 families of Trentino winemakers. An essential criterion for belonging to the Trentodoc brand is in fact the origin of the grapes from the Trentino region alone. Furthermore, the vineyards are all certified organic and carefully preserved to ensure high quality of the raw material. As a Classic Method, Ferrari Trentodoc falls within the careful production rules established by the disciplinary. The production work begins with the manual harvesting of the grapes resulting from an alpine climate characterized by an ideal daytime climate for the ripening of the grapes, as well as by cool nights able to preserve the aromatic fragrance. After the preparation of a base wine especially with the use of Chardonnay and Pinot Noir grapes, the addition of a mixture of sugars and yeasts called liqueur de tirage will start the second fermentation in the bottle. The second fermentation obtained after two months is followed by minimum maturation times defined by the Trentodoc specification and concerning the contact with the yeasts of the refermented wine: 15 months for the Brut, 24 months for the Millesimato and 36 months for the Riserva. For example, in the case of the Ferrari Brut Trentodoc they spend 24 months of aging on the lees while in the case of the Trento Riserva Extra Brut DOC Perlé Nero 2012 Ferrari the aging is 6 years.
Is Ferrari sparkling wine dry?
A Trentodoc Classic Method such as Ferrari can be considered dry as opposed to sweet in compliance with the dosage values set by the production disciplinary. The following definitions are presented in relation to the grams of residual sugar per liter: Pas Dosé (or not dosed) up to 3 and without addition of dosage; Extra Brut between 0 and 6; Brut between 6 and 12; Extra Dry between 12 and 17; Dry, Sec from 17 to 32; Demi Sec between 32 and 50.
What are the characteristics of the Ferrari Brut?
Ferrari Brut is a Trentodoc Classic Method and is considered the manifesto of the sparkling wine house. Also considered the historic label of the winery, Ferrari Brut is made with only Chardonnay grapes and stays at least 20 months on selected yeasts. The Ferrari Brut is straw yellow with greenish reflections and a fine perlage, expressing fresh hints of apple and flowers on the nose embellished with aromas of yeast and bread crust. Very balanced on the palate, it incorporates ripe fruit and the delicate taste of bread.
