Ricotta and spinach ravioli

Ricotta and spinach ravioli are one of the most elegant and delicate first courses in Italian tradition, where the lactic sweetness of ricotta and the herbaceous note of baby spinach call for fresh, balanced wines that are never too robust. For the classic preparation dressed with melted butter and sage, the ideal pairing is with whites boasting fine minerality and acidity: a Lugana or a Soave Classico envelop the creaminess of the filling and bring floral notes, while a Vermentino di Sardegna adds a touch of sea-breeze salinity that beautifully offsets the cheese’s sweetness.

If the recipe becomes richer, perhaps finished with plenty of aged Parmigiano Reggiano or a light fondue, the bubbles of a Franciacorta Satèn or a Prosecco Superiore DOCG provide a sparkling, creamy counterpoint that’s perfect for cleansing the palate with every bite.
