A fresh, saline white can also work, especially with a more delicate dressing. Steer clear of structured, very tannic reds: alongside the sweetness of pumpkin, amaretti, and mostarda they risk accentuating bitterness and making the pairing less harmonious.

Pumpkin gnocchi

Pumpkin gnocchi are more delicate than Mantuan tortelli: the pumpkin is worked into the dough, and the classic butter-and-sage dressing leaves room for the herbs’ aromatic notes. You therefore need a fresh white with enough body to stand up to the butter, and with aromatics that won’t overpower the dish’s delicacy. Alto Adige Kerner is a good choice because it combines citrus and floral aromas with a balanced structure, coming across as less intense than Gewürztraminer yet more expressive than a neutral white. If the dough includes a generous amount of nutmeg, you can opt for a more aromatic wine, such as a Gewürztraminer. The mistake to avoid is a white that’s too light and shy on aroma, which would get lost next to the butter and pumpkin’s sweetness.
