Pumpkin velouté

Franciacorta Brut is particularly suitable because it combines freshness, structure, and a lively sparkle that can accompany the creaming without overwhelming pumpkin’s delicacy. If the risotto also includes sausage, the dish gains intensity and you can choose a more firmly structured Franciacorta, or opt for a Trentodoc instead. Avoid sparkling wines that are too soft, which would amplify pumpkin’s sweetness instead of balancing it.

Roasted pumpkin

Oven cooking concentrates pumpkin’s sweetness and develops more intense notes, especially when the surface takes on color. If rosemary, thyme, or other aromatic herbs are added, the dish also gains a balsamic facet that calls for a fresh, precise wine. Riesling—especially versions from Alto Adige and Val Venosta—offers the acidity needed to counter the sweetness and a citrusy profile that suits the preparation’s aromatic character. If the pumpkin is particularly concentrated and caramelized, it can be interesting to choose a Riesling with some evolution, able to deliver greater complexity without losing freshness. In this case you need a wine that keeps the palate lively without adding extra sweetness. Lambrusco is an effective choice: its freshness and effervescence lighten the dressing and accompany the sweet component of the filling, while the fruity profile stays in tune with the recipe’s ingredients. A fresh, saline white can also work, especially with a more delicate dressing. Steer clear of structured, very tannic reds: alongside the sweetness of pumpkin, amaretti, and mostarda they risk accentuating bitterness and making the pairing less harmonious.

Pumpkin gnocchi

Pumpkin gnocchi are more delicate than Mantuan tortelli: the pumpkin is worked into the dough, and the classic butter-and-sage dressing leaves room for the herbs’ aromatic notes. You therefore need a fresh white with enough body to stand up to the butter, and with aromatics that won’t overpower the dish’s delicacy. Alto Adige Kerner is a good choice because it combines citrus and floral aromas with a balanced structure, coming across as less intense than Gewürztraminer yet more expressive than a neutral white. If the dough includes a generous amount of nutmeg, you can opt for a more aromatic wine, such as a Gewürztraminer. The mistake to avoid is a white that’s too light and shy on aroma, which would get lost next to the butter and pumpkin’s sweetness.
