Appassimento is a traditional Italian wine method where grapes are dried before fermentation to concentrate flavor, sweetness, and body. The result is powerful, smooth wines with notes of ripe fruits, spices, and chocolate. This method is behind greats like Amarone, Ripasso, Governo, and Sforzato (Sfurzat) – each with its unique character but sharing the same deep, generous style. Explore our selection of Appassimento wines and find your next favorite!
