The wine for soups, minestrone and legume dishes depends above all on texture and seasoning: a light minestrone calls for freshness and delicacy, whereas pasta e fagioli or ribollita can stand up to a more structured red. The rule is simple: the richer and more persistent the dish, the more intensity and acidity the wine needs to accompany it without weighing it down.

Vegetable minestrone

Classic minestrone, with carrot, celery, onion, zucchini and potatoes, is a delicate dish, thinned with broth and marked by a gentle vegetal sweetness that doesn’t call for an important wine. An overly structured or oak-driven white would risk overpowering the vegetables: better a young, fresh, floral wine, with enough acidity to give each mouthful lift. Soave Classico DOC is a well-balanced choice: Garganega brings floral and citrus notes, while the freshness accompanies the broth without masking the green component. Best to avoid heavily oaked Chardonnay: with such a simple dish, the vanilla and toasted tones would steal the show.

Pasta e fagioli

With pasta e fagioli the texture changes: the pasta’s starch and the creaminess of the legumes give the dish greater length, especially when the recipe includes a generous soffritto or a liberal drizzle of oil. Here, acidity and a gentle fizz help make each bite more nimble. Dry Lambrusco di Sorbara DOC is particularly suitable: it has freshness, a light sparkle and delicate fruit that match the rustic character without adding weight. If the pasta e fagioli is very dense and rich, you can opt for a Lambrusco with more structure, as long as it stays fresh and not too alcoholic.

Chickpea and lentil soups

Chickpeas and lentils have a fuller flavor than a simple minestrone, especially when the soup is scented with rosemary, bay, sage or chili and finished with extra-virgin olive oil. In this case you need a wine with sufficient aromatic intensity, but without overly aggressive tannins. A young Montepulciano d'Abruzzo DOC is a convincing choice: red fruit, good freshness and generally supple tannins accompany the rustic character of the legumes without overpowering it. If the soup is particularly simple and lightly seasoned, you might prefer an even lighter-footed, gently extracted red.

Ribollita and Tuscan kale soups

Day-old bread, beans, Tuscan kale and extra-virgin olive oil make ribollita dense and flavorful, with a characteristic bitter edge from the greens. It’s a dish that can take a fresh red, provided the tannins aren’t too firm: an overly tannic wine would accentuate the kale’s bitterness. Chianti DOCG, based on Sangiovese, works thanks to its balance of acidity, fruit and tannin: the freshness lightens the oily component, while the wine’s character keeps pace with the dish’s rusticity. It’s better to avoid both overly concentrated reds and very delicate whites, which would both struggle against the ribollita’s density.

Legume soups with farro, pancetta or pork rind

When farro, borlotti beans, pancetta or pork rind come into play, the soup becomes richer and more persistent: beyond the legumes’ texture there’s a fatty component that calls above all for freshness. Barbera d'Asti DOCG is particularly suitable thanks to its natural acidity and juicy fruit, which refresh the palate without adding excessive tannic grip. If the preparation is less rich and includes no cured meats, you can choose a younger, more immediate Barbera, following the same principle of freshness.

The selection follows a simple principle: the wine grows in intensity along with the dish’s structure. For minestrone, freshness and delicacy come first; with pasta e fagioli and richer preparations, effervescence, acidity and greater aromatic presence become important; for ribollita and soups with cured meats, you need a red that can stand up to texture and flavor without excessive tannin. It’s not the color that determines the pairing, but the overall weight of the preparation.
