The choice therefore doesn’t depend on the color of the wine, but on the overall balance of the dish. A simple preparation, such as tajarin with butter and truffle, can find a natural partner in Nebbiolo: tannin, freshness and a terroir-driven profile are part of the Langhe tradition. When the rich, creamy component increases, as in the case of eggs, risottos and fondues, a more structured white can offer a more direct balance. Here’s how to choose case by case.

Tajarin with truffle, pairing with Nebbiolo

Piedmontese tajarin, simply dressed with butter and truffle, are one of those cases where red wine is by no means out of place. Egg pasta and butter give the dish structure and richness, while truffle brings intense, persistent aromatics: you need a wine with enough freshness and tannin to support the seasoning, but without overbearing oak that would cover the truffle. Nebbiolo is the traditional pairing of the Langhe because it combines acidity, tannin and an aromatic profile that speaks to the truffle’s earthy character. A Langhe Nebbiolo is a particularly well-balanced choice, while for a richer dish you can move up to a more structured Nebbiolo. The mistake to avoid is choosing a red that’s too soft and ripe: sweet fruit and oak risk overshadowing the truffle’s aromatic side.

Truffle risotto, finished with butter

In risotto, finishing with butter and Parmesan increases the creaminess and length of the dish: the wine therefore needs more structure than what you’d choose for a simpler preparation. You want a white able to handle the richness without losing freshness, with a mineral component that accompanies the truffle’s aromatic depth. A Burgundy Chardonnay offers a particularly effective balance of tension, structure and minerality. If the finishing also includes a more aged cheese, you can look for an even broader, more persistent wine, such as a Meursault. Egg with truffle, fried or sunny-side up

With egg the challenge changes: the yolk adds a rich, creamy, enveloping component that can make the wine feel less incisive. You therefore need a taut white, with enough acidity to refresh the palate and a restrained aromatic profile, so the truffle remains recognizable. A white in the style of Saint-Péray from the Rhône Valley or a well-structured Trebbiano d'Abruzzo can accompany the dish well, offering freshness and body without introducing a dominant aromatic profile. Better to avoid overly soft, rounded whites: their enveloping character would add to that of the yolk, making the pairing heavier.

Cheese fondue with truffle

With fondue, the cheese brings more fat, savoriness and length to the dish, while truffle adds aromatic depth. Here you need a more structured wine, one that won’t disappear in front of the fondue and is fresh enough to keep the palate lively. A Châteauneuf-du-Pape Blanc or an Hermitage Blanc from the Rhône Valley have the body and persistence to support the dish, even when they show a softer, spicier side. Among Italian alternatives, a Trebbiano Spoletino can offer a good combination of structure, freshness and depth. The guiding rule is simple: the richer and more flavorful the fondue, the more structure the wine needs in order not to be overwhelmed.
