Gnocchi met ragù vormen een tijdloze klassieker onder de Italiaanse eerste gangen, waarbij de zachtheid van de aardappel en de rijkdom van de vleessaus vragen om wijnen die zoutigheid, zuren en structuur in balans brengen. Voor de traditionele versie met ragù alla bolognese of op Campaanse wijze bieden een Chianti Classico of een Cerasuolo d'Abruzzo een uitgebalanceerde combinatie: de zuren en tanninestructuur van Sangiovese, of de levendige, fruitige frisheid van Cerasuolo, snijden door het vet zonder de fijnheid van de gnocchi te overstemmen. Wordt het gerecht daarentegen geserveerd met een royale snuf Parmigiano of in een iets rijkere variant, dan helpt de bruis van een droge Lambrusco het gehemelte te verfrissen met een levendig en aangenaam accent.

Wanneer de ragù intenser en kruidiger wordt, of bereid is met smaakvolle vleessoorten zoals wild zwijn, lam of worst, zijn wijnen met meer body en warmte op hun plaats. Een Primitivo of een Syrah sluit perfect aan bij de kruidige tonen en de meer gestructureerde sauzen, dankzij hun aroma’s van bessen en hun zachte, omhullende mondgevoel. Tot slot zorgt een Malbec bij bijzonder rijke interpretaties, lang gegaard of verrijkt met gesmolten, gerijpte kazen, voor de juiste structurele kracht en fluweelzachte tannines die elke hap ondersteunen.
