Description

Panot GaudÍ Brut Reserva is an organic Cava from D.O. Cava that pays homage to Catalan modernism and the identity of Barcelona, reinterpreting on its label the celebrated “panot” inspired by the works of Gaudí. Produced by the historic Cavas Hill winery, founded in 1887 and one of the oldest in the denomination, it originates from vineyards in Alt Penedès, on calcareous soils influenced by the sea breezes of Garraf—ideal conditions that favor a slow and balanced grape maturation. The traditional blend of Xarel·lo, Macabeo, and Parellada expresses the authenticity and elegance of the territory.

The grapes are hand-picked at optimal ripeness and vinified separately, with the base wine fermented in stainless steel tanks to preserve freshness and aromatic purity. The second fermentation takes place in bottle following the traditional method, followed by a long ageing on the lees in the underground cellars of the producer, where the wine develops aromatic complexity, finesse, and a creamy texture.

In the glass, it shows a bright yellow color with golden highlights and a fine, persistent perlage that forms a delicate crown. The bouquet is fresh and expressive, with notes of pear, kiwi, and pineapple accompanied by citrus nuances and a subtle floral hint. On the palate, it is balanced and lively, with ripe fruit supported by pleasant acidity; hints of mandarin and a slight anise note emerge, followed by a soft finish with elegant touches of toasted bread and dried fruit.

It pairs beautifully with fish dishes, seafood, sushi, and light creations of contemporary cuisine.
