Panot Gaudí Pinot Noir Rosé is an organic Cava from the D.O. Cava that pays tribute to Catalan modernism and the identity of Barcelona, reinterpreting in the design of its label the famous “panot” inspired by the works of Antoni Gaudí. Produced by the historic winery Cavas Hill, founded in 1887 and one of the oldest in the denomination, this rosé sparkling wine is made from Pinot Noir grapes from selected organic vineyards in Alt Penedès, a highly suitable area that imparts elegance, freshness, and a pronounced aromatic expression to the wine.
The grapes are hand-picked at optimal ripeness and undergo a brief cold maceration to extract the delicate pink color and preserve varietal finesse. The base wine ferments in stainless steel tanks and then, following the traditional method, undergoes a second fermentation in the bottle with extended aging on the lees in the underground cellars of the estate, a process that helps develop greater complexity, finesse, and elegance.
In the glass, it shows a pale, bright and elegant rosé color. The bouquet is intense and fragrant, with aromas of fresh red berries such as raspberry and cherry, accompanied by delicate floral nuances. On the palate, it is fresh and fruity, balanced and dynamic, supported by lively acidity that gives precision and lightness; the finish is long, harmonious, and refined, with subtle hints of red berries.
It pairs perfectly with appetizers, fish and seafood dishes, sushi, carpaccio, fresh cheeses, and red fruit-based desserts.
