Description

Ciavolich Extra Virgin Olive Oil is made from olives grown in the territories of Loreto Aprutino and Pianella, in the heart of the so-called "golden triangle" of olive growing in Abruzzo. Obtained from the Dritta cultivar, one of the oldest and most representative varieties in the area, it thrives on clay-limestone soils that help define its balance and character.

The harvest takes place early to preserve the quality of the olives and is carried out by hand with the help of advanced mechanical tools. The olives are pressed within a few hours of harvesting at a highly technological mill, using a two-phase extraction process at controlled temperatures kept below 25°C at all times.

It has a balanced organoleptic profile, featuring a fresh, medium-intensity fruitiness. On the nose, delicate notes of almond and artichoke emerge, accompanied by subtle grassy undertones. On the palate, the bitterness and spiciness are well integrated, resulting in a harmonious and never overpowering finish, with a pleasant persistence.

Perfect raw or cooked, it enhances dishes based on legumes, meat, fish, vegetables, and traditional recipes.
