Description
Saint-Albert is a sweet white wine produced by Plaimont in the heart of the French South-West, in the Vic-Bilh region. The grapes come from selected plots located on clay hillsides exposed to the east and southeast, which benefit from the first morning sun rays, promoting optimal ripening of the grapes.
The harvest takes place manually in mid-November, on Saint Albert's day, with collection in perforated crates to preserve the integrity of the naturally dried grapes. After a light settling, alcoholic fermentation takes place in oak barrels (50% new and 50% of second use) for several weeks. Once the desired balance between acidity and sugars is reached, fermentation is stopped by lowering the temperature. The wine then matures for 8-10 months on fine lees, with regular bâtonnage, inside the same fermentation barrels.
On the eye, it presents a golden hue with bright reflections. The nose offers a complex bouquet of candied citrus fruits (cedar, lemon peel), sweet spices, and quince. On the palate, it is smooth and rich, supported by a lively acidity that gives freshness and lightness, with a persistent and harmonious finish.
It pairs perfectly with foie gras, blue cheeses like Roquefort, and low-sugar desserts like rhubarb tart.
