Description
Le Faîte Blanc is a dry white wine produced by Plaimont, representing a symbol of Saint Mont in the southwest of France. It is made from a blend of three indigenous grape varieties: Gros Manseng, Petit Courbu, and Arrufiac, cultivated in selected plots with clay-limestone soils, variegated clays, and tawny sands, which give the wine freshness and complexity.
The vinification involves separate fermentation of the three grapes, followed by aging on fine lees for 10-12 months, with bâtonnage in barrique and remontage in vats. This process helps build the wine's structure and ensures its cellaring potential.
In appearance, it is pale yellow with silvery reflections. The nose reveals citrus notes, acacia flowers, and a hint of spices. On the palate, it is round, long, and complex, with a final freshness that enhances its elegance.
It pairs perfectly with fish dishes such as meunière-style red mullet, sole fillets, or sea bass fillet with porcini mushroom cream.
