Description
"Call Me Valpo" is a new and modern way to interpret Valpolicella and the grapes that compose it. The winemaking technique used aims to preserve and enhance all the fragrance of the fruits both on the nose and on the palate. The result is a special red wine, decidedly summery, to be enjoyed fresh from the fridge for an aperitif with friends, a pleasant picnic, or a relaxing day at the beach.
This Valpolicella Classico from Domìni Veneti is a young red wine made from native grapes such as Corvina, Corvinone, and Rondinella, grown in the historic area of the Valpolicella Classica on calcareous soils of marine origin. The vineyards, located between 150 and 350 meters above sea level, express a perfect balance between freshness and territorial typicality.
The vinification process involves soft crushing with destemming and fermentation at a controlled temperature, followed by a short maceration to preserve fragrance and aromatic freshness. After full malolactic fermentation, the wine refines in steel tanks, maintaining a straightforward and immediate style.
To the eye, it shows a pale and brilliant ruby red color. On the nose, it offers lively aromas of red fruits and flowers, with clear notes of cherry and raspberry and a delicate spicy hint. On the palate, it is dry, slightly tangy, medium-bodied, and characterized by a pleasant sapidity and persistence.
It pairs perfectly with appetizers, fresh pasta, and light dishes from traditional cuisine.
