Description

The Aglianico del Vulture Grifalco by Grifalco is a red wine made from 100% organic Aglianico grapes grown in the vineyards located in the municipalities of Venosa, Maschito, and Forenza, in the heart of the Vulture. The harvest is done manually with a careful selection in the vineyard, followed by a second sorting in the winery using an advanced linear destemming system, which allows for the elimination of any green residue and only the use of perfectly ripe grapes.

Winemaking involves soft pressing and fermentation in temperature-controlled steel tanks, never exceeding 28°C, with a maceration on the skins of about 10 days. After racking, the wine ages on fine lees in second-pass French oak barriques and tonneaux for a period ranging from 6 to 12 months, during which malolactic fermentation occurs. Subsequently, the mass is stabilized in steel before bottling, followed by further aging in the bottle for at least 6 months.

Visually, it presents with a deep ruby red color. The bouquet is characterized by mineral notes of graphite, accompanied by hints of cocoa, coffee, and embers, with nuances of red fruit and black pepper. On the palate, it is balanced and enveloping, with a medium structure, sweet tannins, and vibrant acidity that supports the wine's persistence and depth.

It pairs perfectly with meats and cheeses, enhancing their richness with its elegant complexity.
