Description
Amarone della Valpolicella Cascina San Vincenzo is a red wine that truly reflects the character of Valpantena and the commitment of Famiglia Pasqua to sustainable viticulture. Born from vineyards cultivated on calcareous-clayey soils that bring structure and elegance. The blend is made up of Corvina, Corvinone, and Rondinella, varieties that provide aromatic complexity and great ageing potential.
The grapes are hand-harvested in mid-September and left to dry for about three months, losing 25-30% of their weight and concentrating aromas and structure. After crushing, fermentation takes place in steel for about 25-30 days with frequent punch-downs to extract color and tannins. This is followed by malolactic fermentation in French oak barriques, where the wine matures for 18-20 months before further refining in the bottle for four more months.
It shows an intense garnet red color. The bouquet is rich and enveloping, with notes of cherry, tobacco, leather, dark chocolate, and vanilla. On the palate, flavors of ripe wild berries and delicate smoky hints emerge, accompanied by velvety tannins and lively freshness. The finish is long, persistent, and harmonious.
This Amarone pairs perfectly with braised meats, game, and aged cheeses, enhancing their structure with its intensity and complexity.
