Description

From Sorì Paitin the Paitin winery originated its first Barbaresco. Today it continues to produce it, as a tribute to the first step of a long road.

Sorì Paitin is the only Nebbiolo vineyard south of Neive, with a particularly compact soil of the loamy type rich in fossil Marne di Sant'Agata. It extends over 3.7 hectares distributed along an altitude ranging from 280 to 320 meters. It carries out maceration and fermentation in steel, to then refine 24 months in Slavonian oak barrels.

At sight it is garnet red. The scent is complex in the notes of dark fruit, aromatic herbs and spices. In the mouth it is full-bodied, enveloping and enlivened by a fresh vein. It perfectly translates the finesse of Barbaresco.

To be combined with a rabbit with peppers.
