Description
What kind of wine is it
Barolo Paiagallo by Mauro Veglio is a red wine of great finesse made from Nebbiolo grapes, born in Piedmont in the homonymous additional geographical designation. This wine stands out for its clear fruity profile and a well-balanced tannic texture. The winemaking process combines a long maceration with targeted aging in wood, thus offering a sip of precise technical approach. The final expression faithfully reflects its territory of origin and the production choices.
Where does it come from
The vineyards reside in Paiagallo, a renowned area of the municipality of Barolo in the Langhe. The vines grow on marl-sandy soils and benefit from a favorable southeast exposure, which ensures regular ripening. These environmental conditions allow Nebbiolo to express its potential with aromatic clarity and structural balance, in a manner that mirrors the authentic Piedmontese hillside landscape.
How is it produced
Production begins with a pre-fermentation maceration at low temperature for forty-eight hours, aimed at preserving varietal notes. This is followed by fermentation in steel with skin contact for several weeks, targeting correct polyphenolic extraction. After malolactic fermentation, an aging of two years in small oak barrels, partly new, enriches the wine with greater aromatic complexity and definition.
Tasting notes
The glass reveals a delicate ruby red, with faint garnet highlights. The bouquet unveils intense strawberry and raspberry aromas, with a typical varietal character. On the palate it is refined, supported by soft tannins and a harmonious progression that leads to an elegant and persistent finish.
Food pairings
At the table, it pairs joyfully with lamb dishes and game specialties, where the refined tannins balance flavorsome meats. In keeping with Piedmontese gastronomic inspiration, it is ideal with the classic brasato al Barolo and slow-cooked recipes, which enhance the wine’s taste balance and aromatic nuances.
Serving occasions
This red enriches occasions seeking a wine of stylistic precision, capable of enhancing structured lunches and hearty courses. It proves a perfect guest at dinners featuring game or important dishes. Oak aging and a long production process suggest serving it to fully appreciate its formal elegance and remarkable continuity on the palate.
