What kind of wine is it?
Beaune 1er Cru Les Aigrots by Domaine de Montille is a dry white from Burgundy made from Chardonnay. It stands out for its elegant and full-bodied style, with crisp fruit and lively freshness. A saline vein supports the drinkability even in its youth. The winemaking process includes alcoholic and malolactic fermentation in barrels, followed by aging on fine lees and a period in steel to preserve tension and precision.
Where does it come from?
The wine comes from the Les Aigrots climat, at the foot of the Beaune hillside, from a 0.49-hectare parcel. The clay and limestone marl soil, typical of the Beaune terroir, encourages balanced ripening thanks to the gentle slope. The name of the place derives from Argifolium, linked to the presence of butcher’s broom.
How is it produced?
The grapes arrive at the cellar intact and undergo gentle pressing. The must is subject to a light debourbage for delicate clarification. Alcoholic and malolactic fermentation takes place in partly new oak barrels from Allier with light toasting. Aging continues for about a year on fine lees, then for 4-6 months in stainless steel tanks to preserve energy and clean flavors.
Tasting notes
Straw yellow color with golden highlights. Intense and fragrant nose with ripe yellow fruit, citrus, and a hint of pastry, enriched by subtle toasted notes. The palate is round and expansive, supported by lively freshness and a savory vein that stimulates the palate, and offers harmonious and precise balance.
Food pairings
Pairs well with delicately structured yet flavorful fish dishes, such as sole fillets with butter or baked sea bream with aromatic herbs. In French cuisine it accompanies sole meunière and shellfish in a light sauce. It is also excellent with delicate white meats and soft, not overly matured cheeses, without excessive spicing.
When to serve
Ideal when looking for a balanced Burgundy white, capable of combining roundness and verve, suitable at the table or as an important glass. Serve at 10-12 °C in a wide glass to enhance citrus notes and barrel-aging nuances. A few minutes of oxygenation before serving is recommended. It is immediately enjoyable due to its accessibility and can evolve for several years if well stored.
