How it is made
The grapes, harvested from late September to early October, undergo a rigorous manual harvest. Once in the cellar, spontaneous fermentation takes place in open-top wooden vats, which allow extended contact with the skins to maximize the extraction of color and aromatic components. Maturation continues for 18 months in first- and second-fill barriques, a crucial phase to fine-tune the tannins and enrich the spicy profile. The final balance settles through a further bottle aging of at least twelve months.
