Bourgogne Aligoté from Domaine de Montille is a still white wine made from Aligoté grapes cultivated in Burgundy. The vinification involves fermentation in used barrels followed by stainless steel to preserve the purity of the fruit and a linear structure. Where does it come from

How is it made
Production begins with gentle pressing of the grapes, followed by a light débourbage to clarify the musts. Alcoholic and malolactic fermentation occurs in used barrels, a choice that avoids intrusive aromas and preserves freshness. The wine matures for about a year in wood, then spends 4–6 months in stainless steel before filtration and bottling.

On the palate, it is dry, linear, and taut, with integrated acidity and medium body.
