Description
What type of wine it is
The Cadillac from Château Haut-Mouleyre is a sweet white wine from Bordeaux, an authentic expression of Sémillon grapes grown in old vines plots. This wine stands out for its fresh, modern profile, able to combine great structure with remarkable persistence on the palate. Ageing in French oak barrels achieves superb balance and defines a precise technical character, enhancing the aromatic richness of the fruit in every sip.
Where it comes from
The vineyards are located in the village of Escoussans, within the renowned Entre-Deux-Mers wine region, on the right bank of the Garonne. The vines root in clay-limestone and clay-sandy soils, enriched by a subsoil of alluvial colluvium and Pliocene molasse. This privileged position ensures maximum sun exposure and optimal drainage, crucial factors for the grapes to develop a defined aromatic concentration and an elegant structural profile.
How it is made
Production begins with a rigorous manual harvest of Sémillon grapes, followed by successive selections to isolate only bunches that have reached optimum ripeness. The ageing process takes place entirely in French oak barrels for nine months, using a precise balance of new and first-passage wood. This careful maturation results in a clearly defined aromatic depth and preserves the freshness that characterizes the estate’s style.
Tasting notes
To the eye, the wine displays a golden yellow color embellished with bright silvery highlights. The bouquet is fine and complex, featuring floral and spicy notes with clear aromas of pineapple, citrus peel, white flowers, and honey. The palate is broad, balanced, and long-lasting, with an enveloping mouthfeel recalling almonds, dried apricots, and candied orange, in a structured harmony of sweetness and lively energy.
Pairings
Its innate ability to balance sweetness and freshness makes it the ideal companion for succulent and slightly spicy dishes. It harmonizes with elaborate preparations like quails with grapes, poultry with cream and orange, or a wok of spiced prawns with honey, where the wine's structure supports intense and layered flavors. It also pairs perfectly with classic blue cheeses and ends the meal with elegance alongside fresh or candied fruit-based desserts.
When to serve it
It is the perfect choice for occasions requiring a sweet and balanced wine, capable of accompanying a rich meal without ever cloying the palate. Its versatility allows it to be served during dinner with sweet and spicy recipes, or at the end of a meal to beautifully accompany dessert. The intriguing presence of citrus and dried fruit notes guarantees a clean finish that delivers a rewarding sip to those who seek elegance and complexity in every glass.
