Description

The Giallo di Oppida Aminea was born in the homonymous estate, in vineyards located in the Sannio beneventano, in Campania, conducted according to the symbiotic philosophy, which enhances the land-vine link.

It is produced with Fiano, Greco and Coda di Volpe grapes, harvested exclusively by hand. At the beginning of the ripening, the leaves of the vine are enriched with live microorganisms, thus allowing to develop aromas starting from the skins. Once pressed, the different varieties ferment together, with light skin maceration and permanence on the fine lees. The whole process is aimed at expressing the aromatic potential of the native vines with which it is obtained.

The Yellow of Oppida Aminea has a straw yellow color. The nose opens with an intense and enveloping bouquet, with hints typical of the varieties used. In particular, the use of a blend of more mature grapes, Fiano, and richer in acidity, Greco and Coda di Volpe, allows the acidity to accelerate the release of "silent" aromas, which usually occurs with long aging. On the palate it is savory and fresh, pleasantly soft and aromatic.

Perfect to accompany fish and seafood dishes, this white wine is ideal in combination with goat cheese and vegetarian dishes.
