Description
The Castel del Monte Tormaresca Pietrabianca by Marchesi Antinori originates from vineyards located in the Bitonto commune of Minervino Murge, in the heart of the Castel del Monte DOC.
It is produced mainly from Chardonnay grapes and Fiano di Puglia grapes, which are hand-picked and carefully selected at full ripeness. After brief cold decantation, the Chardonnay must ferments in new French and Hungarian oak barriques at a controlled temperature and matures in the barriques where it undergoes malolactic fermentation. The Fiano ferments separately in steel at a controlled temperature of 16-17°C to enhance its fresh and acidic notes, and is then blended. A further refinement in bottle for 6 months follows before release onto the market.
The Pietrabianca from Antinori presents a straw yellow color with golden highlights. On the nose, it opens with intense aromas of white fruit, enriched by delicate notes of vanilla and acacia honey. On the palate, it proves balanced, elegant, and fresh.
Perfect for accompanying appetizers and fish-based dishes, it is ideal with shellfish and aged cheeses.
