Description
Vinyaes de Can Sala is a Cava de Paraje Calificado produced in Spain from Xarel-lo and Parellada grapes selected from historic vineyards located at an altitude of 340 meters. This sparkling wine is born from a production philosophy focused on the highest expression of the territory, with a limited production that enhances elegance, depth, and authenticity.
Vinification follows a minimal intervention approach, with gentle pressing using the traditional Dubois press and meticulous fermentation. The wine ages on the lees for a long period, developing complexity and finesse, while natural decanting helps preserve the purity of the aromatic profile.
In the glass, it shows an intense yellow color and a fine, persistent perlage. On the nose, it offers a complex profile with notes of tropical fruit and yellow-fleshed fruit, accompanied by hints of pastry, yeast, and delicate toasty notes. On the palate, it is broad and balanced, with a creamy texture and remarkable persistence leading to a long and elegant finish.
It pairs perfectly with fish dishes, shellfish, delicate risottos, and refined cheese-based preparations.
