Description

Panot Gaudí Brut Reserva is a Cava that pays tribute to Catalan modernism and the identity of Barcelona, reinterpreting the famous “panot” inspired by Gaudí’s works on its label design. Produced by the historic winery Cavas Hill, founded in 1887 and one of the oldest in the appellation, it originates from vineyards located in the Alt Penedès on calcareous soils influenced by the sea breeze from Garraf. These ideal conditions facilitate a slow and balanced ripening of the grapes. The traditional blending of Xarel·lo, Macabeo, and Parellada expresses the authenticity and elegance of the region.

The grapes are handpicked at optimal ripeness and vinified separately, with primary fermentation of the base wine in stainless steel tanks to preserve freshness and aromatic purity. The second fermentation takes place in the bottle following the traditional method, followed by long aging on the lees in the producer’s underground cellars, where the wine develops aromatic complexity, finesse, and a creamy texture.

It shows a bright yellow color with golden highlights and a fine, persistent perlage forming a delicate crown in the glass. The bouquet is fresh and expressive, with notes of pear, kiwi, and pineapple accompanied by hints of citrus and a subtle floral touch. On the palate, it is balanced and lively, with ripe fruit sustained by pleasant acidity; hints of mandarin and a slight anise note emerge, followed by a soft finish with elegant nuances of toasted bread and dried fruits.

It pairs perfectly with fish dishes, seafood, sushi, and light creations of contemporary cuisine.
