This label, originating from the heart of the Montagne de Reims, reflects the characteristics of the soil through a full taste profile and a great mineral definition. Made using the Traditional Method, it undergoes a long period of bottle aging to enhance its longevity and development over time.

Where it comes from

The grapes are grown in Ambonnay, a renowned village in the Champagne region, within a single parcel classified as Grand Cru. The historic vineyard Les Crayères is rooted in unique soil where the chalk layer lies just centimeters below the surface. This close proximity to the chalky substrate gives the wine a pronounced and rigorous mineral component, resulting in an extremely linear taste progression.

How it is produced

The process begins with a spontaneous fermentation in barrique, carried out without added yeasts to preserve the authenticity of the fruit. Subsequently, the secondary fermentation according to the Traditional Method is accompanied by a lees ageing of fifty months. This long rest, combined with unfiltered bottling and a minimal dosage, allows for remarkable aromatic depth and keeps the palate tension intact.
