Description
The Champagne Blanc de Noirs Gran Cru Brut from Egly-Ouriet, a famous family production from Ambonnay, stands out for its origin from the historic "Les Crayères" vineyard, planted in 1946 and classified as Grand Cru. Located in the heart of the Reims Mountain, this domaine is known for its exceptional soil just 30 centimeters from the "craie", a layer of chalk that gives unique characteristics to the wine.
The Blanc de Noirs winemaking process involves spontaneous fermentation in barriques without the addition of yeasts, followed by aging on the yeasts for 50 months, bottling without filtration and a minimum dosage of approximately 2 g/l. This production method enhances the purity and complexity of Pinot Noir, allowing the wine to achieve a perfect synthesis of power and class, with considerable aging potential.
Upon tasting, the Champagne shows a golden yellow, deep and brilliant color. Complex notes of jellied red fruit emerge on the nose, enriched by tones of spices and a clear chalky undertone. On the palate, the wine unfolds through a well-defined structure: a mineral and fresh start, followed by an enveloping softness and a persistent and linear finish, which returns to emphasize the minerality.
This champagne pairs beautifully with rich and powerful dishes, ideal for enhancing its structure and complexity. It is particularly suitable for accompanying second courses based on fatty fish, large shellfish or red meat. We recommend serving it with buttered lobster or a grilled beef fillet, for a high-level gastronomic experience.
