Description

What kind of wine it is

Pascal Doquet's Champ d’Alouettes is a rigorous Grand Cru Champagne in the Blanc de Blancs style, made exclusively from Chardonnay grapes of the Le Mesnil-sur-Oger village. As it follows the rules of the Traditional Method, the wine takes on an elegant and mineral Extra Brut profile, focusing on precision and structural depth. The use of oak barrels and an extended maturation period define a complex aromatic texture, ending with a long and balanced finish.

Where it comes from

The grapes come from the specific Lieu-Dit parcel located in Le Mesnil-sur-Oger, a village classified as Grand Cru within the Côte des Blancs, one of the benchmark areas for Chardonnay. The geological identity of its origin shines through in a style centered on elegance, vibrant acidity, and a pronounced mineral signature. The Grand Cru designation, together with the uniqueness of the Lieu-Dit, marks a prestigious and instantly recognizable origin, enhancing the variety’s most authentic expression.

How it is produced

The production process begins with a meticulous selection of the grapes, followed by vinification in oak barrels which immediately gives structure to the must. The prise de mousse, typical of the Traditional Method, precedes a slow and continuous aging on the lees for over fifteen years, essential for developing the wine’s texture. The Extra Brut dosage keeps the tasting dry and essential, highlighting the wine’s natural freshness and profound minerality.

Tasting notes

To the eye, this Champagne displays a bright golden yellow color with fine, dense, and persistent perlage. The bouquet unfolds with aromas of citrus, green apple, and white flowers, soon joined by layered hazelnut notes, vanilla, and bread crust. On the palate, it reveals an elegant texture and marked minerality, supported by vibrant acidity that carries the sip to a rigorous and harmonious conclusion.

Food pairing

This label is the ideal choice to start a meal, as it pairs naturally with raw fish and shellfish, where its vibrant freshness balances the delicate sweetness of the flesh. On the table, it beautifully accompanies seafood recipes that enhance the citrus component and lingering salinity in the glass. Pairing with a platter of seafood or a tasting of fresh cheeses amplifies the finesse of the perlage and the clean finish.

When to serve it

This Champagne brings great satisfaction whenever you wish to enjoy a technically precise Champagne, perfect for elevating an aperitif or a refined dinner. The long lees aging makes it the ideal protagonist for social gatherings that require aromatic complexity and gustatory depth, without sacrificing freshness. Thanks to the balance between acidity and a harmonious finish, it proves to be a versatile companion from the beginning to the end of the meal.
