Description
What kind of wine it is
The Corton-Charlemagne by Vincent Girardin is a white wine from Burgundy starring Chardonnay grapes. This wine, characterized by a broad and elegant style, is supported by a natural acidity enhanced by the peculiar exposure of the vineyards. Careful work in the cellar, which includes the use of French oak barrels, defines a rich and complex taste profile and faithfully introduces the unique features of the Burgundy terroir.
Where it comes from
The grapes come from the renowned communes of Aloxe-Corton, Pernand-Vergelesses, and Ladoix-Serrigny, which are located at the heart of the Corton-Charlemagne appellation. The vines, around forty-five years old, benefit from ideal exposure that helps preserve a vivid natural acidity in the grapes. Their roots grow in soils rich in marl, clay, and limestone, a specific geological composition that enhances both the aroma and the taste of the wine.
How it is produced
The production process begins with manual harvesting of the grapes, followed by a careful selection and slow pressing of the bunches to extract a clear and precise must. The juice is then poured into partially new French oak barrels, where alcoholic and malolactic fermentation regularly take place. Afterwards, the wine undergoes a long aging on its lees for at least eighteen months, a stage that intensifies the texture and aromatic complexity of the final result.
Tasting notes
In the glass, it presents a straw yellow color, distinguished by a lovely brightness. The nose reveals a layered bouquet, where mineral and vegetal notes emerge immediately and gradually develop into refined nuances of flint and lemon zest. On the palate, it offers a rich and complex sip, in which acidity and mineral definition harmoniously balance the wine's structure and precisely recall Burgundy's distinctive characteristics.
Food pairings
The richness and complexity of this white wine pair perfectly with dishes featuring a delicate structure yet a good creamy component. It is recommended with chicken in cream sauce and veal sweetbreads, or with foie gras, where its aromatic breadth and freshness balance the flavors. It also accompanies beautifully medium- to long-aged cheeses, especially Comté or Cantal, enhancing their savory notes on the palate.
When to serve it
This label is an ideal choice when you want to bring a white wine to the table with a strong territorial character, combining breadth and elegance. It is perfect for dinners focused on flavorful and structured dishes and maintains its rigour and balance even when paired with persistent flavors. Thanks to its extended maturation in the cellar, it offers a structure that invites a thoughtful and lingering tasting, allowing you to enjoy its evolution in the glass throughout the meal.
