What kind of wine it is
Alma Assemblage Non Dosato by Bellavista is a Franciacorta without dosage, born from a blend of Chardonnay and Pinot Noir. Produced using the Traditional Method, it offers a taut profile with pronounced freshness. The long aging on the lees and the passage of part of the wines in oak provide aromatic complexity and flavor depth, maintaining an elegant and dry style.
Where it comes from
The grapes come from the best plots of the Bellavista estate, in Franciacorta. These grapes come from selected vineyards, managed to best express the territory. The vineyards have an average age of 28 years, a factor that ensures a consistently high quality yield and provides raw material able to balance energy and aromatic precision.
How it is produced
The manual harvest takes place between late August and early September. The free-run must is obtained through a gentle pressing, followed by fermentation. Part of the wines rests in oak barrels to enrich the structure before the second fermentation in bottle. The aging on the lees lasts thirty months with manual riddling and is followed by disgorgement with no dosage.
Tasting notes
In the glass, it shows a bright yellow color, with fine foam and a persistent perlage. The nose reveals citrus and floral notes intertwined with hints of thyme, Mediterranean herbs, and sweet spices. On the palate, it is vibrant and dynamic due to its crunchy structure and dry progression. The clean finish highlights a perfect balance between freshness and maturity, in keeping with the absence of dosage.
