How it is made
Production involves a manual selection and harvest of the grape clusters, carried out between the end of August and the beginning of September. In line with the principles of the Traditional Method, the subsequent sparkling process unfolds through a slow refermentation in the bottle. The following aging on the lees lasts for at least thirty-six months, a crucial technical step for integrating the bubbles. This path ensures a smooth tasting texture and a clear varietal expression.
