Peter in Florence is a gin that pays tribute to the city of Florence, considered the ideal place for growing the key botanicals needed for gin, such as iris and juniper. It follows English distillery rules for making London Dry Gin to the letter, but also adds many other botanicals, most of which are locally sourced.
An absolute uniqueness is the particular attention given to iris, the symbolic plant of Florence, using both its root and petals—a choice that enhances the presence of this botanical in the final distillate. As if that were not enough, the distillery Podere Castellare di Pelago is equipped with a special still, built in the image of the Carterhead, which is used to make some of the world's finest gins. This still uses steam infusion, allowing a gentle and natural extraction of essential oils and aromas.
