Description
Serre di San Pietro is a Nebbiolo Superiore produced by the Bava family in Cocconato, in the heart of Piedmont, from Nebbiolo grapes grown in the Cadodo vineyard located at about 375 meters above sea level on white calcareous and marly soils with south and south-west exposure; the vineyards are managed with sustainable practices, featuring natural grassing between the rows without the use of chemical herbicides, thus enhancing the historical tradition of this area renowned for producing great, elegant, and structured Nebbiolos.
The grapes are harvested by hand and completely destemmed before crushing; fermentation occurs for about a week in contact with the skins in steel vats where the wine also completes malolactic fermentation, then after racking and natural clarification it is transferred to wooden barrels for about ten months and subsequently further refined in the bottle.
In the glass, it shows a bright ruby red color; the aromatic profile is broad and elegant with delicate floral notes of violet and wild rose followed by more intense fruity nuances accompanied by a subtle hint of aging wood, while on the palate it reveals structure and balance supported by a lively freshness that leads into a long and harmonious finish.
Ideal with roasts, red meats, game, and aged cheeses.
