Penedès Xarel-lo by Can Sumoi is a natural white wine made exclusively from Xarel·lo grapes grown in Spain, in the area of Costers del Montmell. Its style is fresh and precise, marked by a well-defined mineral imprint supported by balanced acidity and a pleasantly saline finish. The winemaking process aims to preserve a direct and territorially expressive profile and includes techniques such as bâtonnage and no filtration, which contribute to a layered texture and long-lasting flavor persistence.

Where it comes from

The grapes come from vineyards located at three hundred meters above sea level in the Costers del Montmell area, within Penedès, a Spanish region renowned for Mediterranean winemaking. The sandy and gravelly soils ensure optimal drainage and favor regular ripening and a clear expression of the grape variety. The elevation of the rows helps preserve the freshness and vibrancy of the fruit. In this specific context, Can Sumoi follows a philosophy based on respect for ancestral traditions and seeks harmony between the soil and the final aromatic profile.

How it is made

Vinification begins with destemming and gentle crushing carried out in an inert atmosphere, followed by low-pressure pressing to obtain clear musts. Alcoholic fermentation takes place in stainless steel tanks with native yeasts, while malolactic fermentation proceeds spontaneously without corrective interventions. During the three months of maturation, bâtonnage is performed twice a week, a practice that increases mouthfeel volume and ensures an essential and consistent character, in line with the choice not to stabilize the wine.
