Description

Le Clos Monopole comes from a single vineyard - a so-called clos - located around the castle of Fuissè, in a wonderful corner of Burgundy.

It is made up of 100% Chardonnay, a variety that has raised the white face of Burgundy to levels of absolute excellence. The Clos dedicated to this Chardonnay has a particularly stratified soil: in the deepest area there is abundant clay, while going up in a middle layer you meet the marl, and then find abundant limestone on the surface. The average age of the vines here is around 50 years. The vinification is aimed at obtaining an important wine, capable of a very long life perspective. For this reason, the maturation takes place in 80% new oak barrels.

A bright straw yellow color stands out at the sight. The nose is intense in its fruity kit of quince, apricot jam and honey. The sip is very elegant and has a perfect balance between flavor and full body. It closes in a refined persistence.

To be combined with fish dishes, both first and second, in preparations that play on expressions of flavor, even articulated and complex. Lobster in Bernese sauce.
