Description

The Recioto della Valpolicella Classico from Farina is a sweet, traditional wine of the Valpolicella Classica. Made from selected Corvina, Rondinella and Molinara grapes sourced from the hills of Negrar, characterized by calcareous, gravelly soils. It is obtained by selecting only the “recie” of the bunch, that is, the sweetest, most loosely packed part.

After hand harvesting, the grapes undergo a natural drying of about four months. Vinification involves cold maceration and slow fermentation in stainless steel. The process includes racking for clarity to preserve the residual sugar, followed by six months' maturation in steel and six months in bottle.

The color is deep ruby red, with a fruity, floral bouquet that evokes violet, wild rose, raspberry and sour cherry jam. On the palate it is velvety, sweet but never cloying, with a soft, approachable character.

Perfect as a dessert or after-dinner wine, it pairs with dry pastries, fruit tarts, chocolate and blue cheeses such as Gorgonzola.
