Description
Pícaro del Aguila is a red wine from Dominio del Águila, a family winery located in La Aguilera, in the Ribera del Duero region of Spain. The property extends over 30 hectares and the viticulture is organic, with special attention to ancient cultivation techniques. The main grapes are Tempranillo (Tinto Fino) with a small contribution of Albillo Blanco and Bobal, grown on poor soils at around 900 meters above sea level.
The winemaking takes place in a traditional 17th century cellar, using artisanal methods and without the use of modern machinery. After malolactic fermentation in oak barrels, the wine ages for 19 months in French or American oak, without undergoing any filtration or clarification process. The entire aging process takes place in the 15th century underground galleries, maintaining a close connection with the techniques of the past.
It has a cherry red color. The nose reveals intense aromas of ripe fruit, berries, spices and light notes of mint. On the palate it is balanced, fresh and juicy, with a refreshing acidity that balances the structure and a long and harmonious persistence.
This red wine pairs perfectly with grilled meat dishes, game and mature cheeses.
