Description

What kind of wine is it

Primitivo di Notte Rossa is an Apulian red wine with a full-bodied style, characterized by excellent freshness and a well-defined balance. Vinification in steel preserves the varietal profile and aromatic clarity of the grapes. It’s a structured red, with a decent capacity for ageing, capable of evolving harmoniously over time.

Where does it come from

It originates in Salento, a wine-growing area distinguished by bright climate and a constant sea breeze. The vineyards are located about one hundred meters above sea level and are planted on deep, clay-rich soils. This composition encourages a mature fruit expression and ensures a well-integrated freshness, clearly outlining its territorial identity.

How is it made

Primitivo grapes are harvested at the beginning of September. The entire fermentation process and cellar operations take place in steel tanks to preserve the purity of the variety and the integrity of the aromatic profile. This production choice results in a wine that maintains a strong balance between structure and acidity, encouraging a natural predisposition to ageing.

Tasting notes

It shows an intense ruby red hue in the glass. The nose reveals aromas of plum and cherry, enriched by hints of rosemary and a delicate note of vanilla. On the palate, it is full-bodied, with well-managed freshness that pleasantly supports the sip. The pronounced taste-olfactory correspondence leads to a persistent finish that stays true to its fruity and spicy profile.

Food pairing

It naturally pairs with tasty main courses and is particularly enhanced by grilled lamb chops. Its structure makes it ideal with regional braised meat dishes, where the fruit remains clearly noticeable. It perfectly complements rich pasta dishes with ragout and classic stuffed veal rolls in sauce, as it balances the intensity of the richest recipes with the fullness of its sip.

When to serve it

It is strongly recommended to accompany meat-based lunches and finds its place during a friendly barbecue. Since it has good ageing potential, it can also be enjoyed after proper cellar ageing, achieving full harmony that enhances the balance between ripe fruit and its structural framework.
