Description

The Sancerre Blanc Les Monts Dames originates from vineyards located on the hill of the same name, in the municipality of Chavignol.

100% Sauvignon Blanc, coming from vineyards characterized by a soil rich in clay and fossils. The harvest takes place in October, when the bunches are fully ripe. Once brought to the cellar they are softly pressed and the must obtained is placed inside oak barrels. Here it remains for a period of about seven months, during which it carries out alcoholic fermentation and refines on its own yeasts. Subsequently bottled, it carries out another maturation period and is then put on the market.

At sight it is straw yellow with golden reflections. The perfume is complex and articulated in balsamic notes of eucalyptus, pine resin and lacquer wax, on a background of flowers and fruit. In the mouth it confirms the complexity in its wide aromatic variety. The entrance is precise and very fine, fresh, tasty and quick, it closes in a persistence of fruit.

Perfect to accompany a salad or fish dishes, or to be combined with a foie gras escalope.
