Labouré-Roi's Santenay is a red wine made exclusively from Pinot Noir grapes grown in the southern part of the Côte de Beaune. How is it produced
Harvesting is done by hand, with a double selection of the best bunches. After destemming and gentle crushing, the must ferments in temperature-controlled vats for 20-25 days; first, a cold maceration lasts 5-6 days. Fermentation uses Burgundy yeasts with daily pumping over and punching down. Aging lasts 12 months in oak barriques, 30% of which are new, to support structure.
Tasting notes
The color appears bright ruby red with garnet highlights. The bouquet reveals ripe cherry, plum, and small berries, with hints of undergrowth, sweet spices, and a touch of licorice. On the palate, the entry is fresh and lively, with silky, well-integrated tannins over a core of red fruit and licorice. The structure remains balanced, acidity is sustained, and the long finish recalls fruity and spicy sensations.
