Description
I Sensi Zibibbo L'Olfatto is a white wine from Abbazia Santa Anastasia, made from 100% Zibibbo grapes grown in the Basse Madonie area.
Fermentation takes place in stainless steel tanks with automatic temperature control between 16 and 18°C, allowing for a long and gradual fermentation that develops remarkable aromatic complexity. The wine ages for 4 months in stainless steel tanks, 1 month on the lees to impart structure and depth, followed by 2 months of bottle aging to refine the aromatic profile.
This Zibibbo white wine shows a straw yellow color with greenish highlights. On the nose it is aromatic and harmonious, with notes of citrus, loquat, peach, plum, and white mulberry, accompanied by floral hints of jasmine, orange blossom, and orange flowers. On the palate it is balanced and fresh, with citrus flavors and summer fruit notes, finishing with a pleasant sapidity.
This wine pairs perfectly with fish dishes and summer salads.
