Description
Zensa Nero d'Avola Appassimento is a red wine produced in the province of Trapani.
The grapes are hand-harvested in mid-September. 20% of them are left to dry for 10-15 days in ventilated rooms. The grapes are destemmed and fermented as whole berries in temperature-controlled steel tanks for 8-10 days. Malolactic fermentation takes place with the addition of lactic bacteria. Finally, 20% of the wine is aged for 4-5 months in oak barriques.
Intense ruby red in color, the nose reveals aromas of cherries, plums, and blackcurrants. The palate is smooth and silky, with a persistent finish.
Ideal with braised meats, lamb, and baked pasta dishes.
