Where does it come from

The Gratus vineyards are located in the Bassa Atesina and on the hills of Montagna, in the province of Bolzano. The climate, with significant temperature variations, favors slow ripening of the grapes, while clay and sandy soils ensure good water retention and mineral supply. These territorial conditions support a wine of great structure with potential for development over time.

How is it produced

Production of Gratus begins with manual selection of Cabernet Sauvignon grapes. After crushing, fermentation occurs at 28°C for twelve days. Extended maceration extracts pigments, tannins, and varietal aromas. The wine matures for fifteen months in French oak barrels and is then refined for five months in the bottle, enhancing its complexity.

Tasting notes

Gratus presents itself as an intense ruby red with garnet reflections. On the nose, blackberry, sandalwood, and a hint of tomato leaf emerge—aromas that represent the main bouquet according to the technical sheet. On the palate, it is full-bodied and smooth, with polished tannins and a balance between savoriness and freshness. The finish is long, with fruity returns and light toasted notes.

Food pairings

This Cabernet Sauvignon pairs well with game dishes such as braised deer and wild boar stew, as well as roasted or grilled red meats. Among regional dishes, it accompanies speck dumplings and polenta taragna. An interesting combination outside the region is lamb tagine with Mediterranean herbs, which highlights the wine's spicy component.

When to serve it
