Description
What kind of wine is it
Aristos from Cantina Valle Isarco is a dry white wine made from Kerner grapes. The color ranges from greenish to straw yellow. It has a full, lively structure and an aromatic character, with a spicy, muscat-like note.
Where it comes from
The grapes grow in Alto Adige, in the Valle Isarco, where the winery is based, in Chiusa in the province of Bolzano. The vineyards are at an altitude of 800-970 meters, with south and south-east exposure and steep slopes. The soils are alluvial, with quartz phyllite, poor, very stony and shallow. Harvest takes place in mid-October.
How it is produced
The grapes are harvested exclusively by hand and trained to Guyot. After a brief skin contact, a gentle pressing follows. Fermentation takes place at a controlled temperature. The wine matures for 10 months on the fine lees, partly in stainless-steel tanks and partly in large casks.
Tasting notes
The color is between greenish and straw yellow. The nose is fruity, aromatic, characterful and very elegant, with a hint of peach. On the palate it is dry, with a full and lively structure. It shows spiciness with a muscat-like note.
Food pairings
Pairs with light appetizers and speck. It accompanies dishes based on eggs or mushrooms, freshwater fish and seafood. It goes well with herb risottos and is excellent as an aperitif.
When to serve it
It is a white suited to the aperitif and to light meals based on fish, eggs or vegetables. Serve in a white wine glass, which highlights its aromatic profile. It has an aging potential of 6-8 years, so it can be kept in the cellar and opened on a special occasion.
