Description
Santo Ippolito by Leonardo da Vinci is a red wine made from Sangiovese, Merlot, and Syrah grapes grown in the vineyards of the Villa Da Vinci estate, located in the heart of Tuscany. The vineyards are situated at an altitude between 40 and 130 meters above sea level, facing mainly southwards on Pliocene soils rich in shells.
Vinification is carried out separately for each grape variety, with maceration on the skins for about 12 days and fermentation at temperatures between 28 and 30°C. Frequent pump-overs and délestages are performed, along with a light saignée. Maturation takes place in oak barriques, mainly new, for a period ranging from 12 to 18 months.
Appears in the glass with an intense red color with violet highlights. The nose reveals spicy notes, marked balsamic hints, and aromas of blackberry jam. On the palate, it is balanced, smooth and enveloping, with an impressive structure that gives the wine great personality.
It pairs perfectly with cured meats, peppered roasted pork, and rosticciana.
